Scrumptious Skinny Spaghetti & Meatballs

This recipe serves 4 people and has about 560 calories per serving (give or take depending on your choice of ingredients).

Ingredients:

2 12-ounce to 14-ounce jars of your favorite marinara sauce. (I used Anjons sauce & you can order it here.)

2 slices of your favorite sandwich bread (Yes, bread! Don’t worry it is for the meatballs)

3/4 cup of water

1/3 pound of ground veal (I didn’t use veal when I made them because I can’t stand the idea of eating a baby cow BUT for all of you baby cow killers out there, go ahead!)

1/3 pound of ground pork

1/3 pound of ground turkey

*I used a little bit more of the turkey & pork instead to make up for the 1/3 pound of missing veal.

1/2 cup of grated Parmesan cheese, plus a little more for serving

1 large egg

1/2 small onion, finely minced

1/3 cup of chopped parsley

2 tablespoons chopped basil

1 teaspoon of oregano

1 teaspoon of salt

1/4 teaspoon red pepper flakes

8 ounces of whole wheat spaghetti

1. Heat the marinara sauce in a large, wide pot over medium heat. Cover to prevent splattering!

2. Remove crusts of the bread, place bread in a medium bowl and pour water over it. Let it sit for 10 minutes, gently squeeze out excess liquid. Put bread in a large bowl & discard the water.

3. Add all the ground meats, Parmesan cheese, egg, onion, parsley, basil, oregano, salt & red pepper flakes to bowl with bread. Gently toss to combine, maintaining a light touch to keep air in the meatballs (Don’t squish the meat too much, or you’ll end up with some tough meatballs). Roll the meat mixture in your hands to create meatballs slightly larger than a golf ball.

4. Remove the marinara sauce from heat to prevent splattering, gently drop the meatballs in the warm sauce. Return tomato sauce to medium-low heat, bring to a simmer & cook, covered, until meatballs have cooked through, about 30 minutes.

5. Cook pasta according to the package, toss with marinara sauce and top with the meatballs & ENJOY! :)
