Super Yummy Chicken Parmesan

I have made this recipe a couple of times for my boyfriend Nate and a couple of his friends. They loved it and so did I so you should try it too. It is easy to make and super yummy! It takes about 15 minutes to prep and 20 minutes to cook & I recommend using fettuccine as your choice of pasta. I got this recipe out of some random recipe book I found at TJ Maxx a couple of years ago for $3.00, “The New Basic Cookbook”.

Shopping list: chicken – tomato sauce – Parmesan cheese – mozzarella cheese

On Hand: bread crumbs – margarine – egg – basil – garlic powder

Ingredients: 1/2 cup seasoned bread crumbs – 3 tablespoons Parmesan cheese; divided – 4 skinless, boneless chicken breasts – 1 egg, beaten – 2 tablespoons margarine – 1 (15 ounce) can tomato sauce (I recommend Anjons tomato sauce. You can order some at www.anjons.com) – 1/4 teaspoon dried basil – 1/8 teaspoon garlic powder – 1/2 cup shredded mozzarella cheese.  This serves 4 people.

TIP: Mix the bread crumbs & Parmesan cheese together ahead of time and store in the refrigerator in a sealed plastic bag up to a day ahead of time. ;)

1. Preheat oven to 350 degrees Farenheit. Mix bread  crumbs with 1 tablespoon Parmesan cheese in shallow dish. Dip chicken into beaten egg. Roll in crumb mixture to coat.

2. Melt margarine in a large skillet over medium heat; Add chicken. Cook, turning once, about 5 minutes. Place in a lightly greased baking dish.

3. Add tomato sauce, basil, garlic powder to skillet; Mix well with pan drippings. Simmer for about 5 minutes or until slightly thickened.

4. Spoon sauce over chicken. Sprinkle with mozzarella and remaining Parmesan cheese. Bake for 20 minutes, boil some water, make some fettuccine to tie it all together & ENJOY! :)
